Sorbetto
(Watch your tongue...)

Traditionally, sorbetto would consist of a tangy fruit-ice for the purpose of cleansing the palate before moving on to headier dishes. Our recipe hopefully served this function beautifully, but was not exactly a fruit ice. It was served very cold, however.

Serving Size: 8

8 medium peaches (ripe but firm)
2 tablespoons lemon juice
3 tablespoons sugar
1 bottle Chianti (750 ml)

Peel peaches and cut into eighths. Place in a stainless steel, glass, or ceramic bowl. Add lemon and sugar and mix gently but well. Let stand 5 minutes. Pour wine over peaches and cover. Refrigerate 8 hours or overnight. To serve, arrange peach segments in wine glasses or dessert glasses and spoon a little wine into each glass. Serve EXTREMELY COLD!
