Serves 2.
This tea, flavoured with cinnamon, cardamom, and cloves, may be served at tea time or at the end of a meal. I love it on cold, blustery days, with some 'Spicy Matchstick Potato Crisps', (page 190) to nibble on the side.
1 1/2 cups water
1 stick cinnamon-(about 1 inch)
8 pods cardamom
8 whole cloves
2/3 cup milk
to taste granulated white sugar
3 tsp. plain tea
Put 1 1/2 cups of water in a saucepan. Add the cinnamon, cardamom, and cloves and bring to a boil. Cover, turn heat to low and simmer for 10 minutes. Add the milk and sugar and bring to simmer again. Throw in the tea leaves, cover, and turn off the heat. After 2 minutes, strain the tea into two cups and serve immediately.
